Roll with zucchini with stracchino cheese and cooked ham recipe

Wash the zucchini and grate well with the large part of the grater in a bowl. Take another bowl and beat the eggs with the Parmesan, add the zucchini and add salt and pepper.

Pour the mixture into a baking sheet or baking dish the size of 30 × 20 cm lined with parchment paper. Bake in the oven at 180 ° C for about 20 minutes.

Once baked, roll it up with the help of baking paper and let it cool. When it has cooled, open the roll, being very careful not to break it: spread the stracchino over it and spread the slices of ham over the cheese.

At this point, re-roll the omelette again, helping yourself with baking paper and leave it in the fridge so wrapped up to cool for at least an hour.

Cut the omelette roll to the zucchini with stracchino cheese and cooked ham and serve.
