Sausage Soap

Recipe Servings: 4

Ingredients

half lb Italian sausage
one tablespoon chopped garlic
one lb spinach
three (fifteen ounce) cans chicken broth
half cup broken pieces capellini
four slices French bread
four teaspoons extra virgin olive oil
two teaspoons freshly grated parmesan cheese

Instructions:

Heaten up a large pot over high heat. Put sausage and cook, mixing occasionally, till brown, five minutes. Put garlic; cook thirty seconds. Put spinach and broth. Pour one empty can of broth with water; put to pot.

Wrap and bring mixture to a boil. Put capellini, wrap and boil two minutes more.

Meanwhile, heat broiler. Broil bread slices on cookie sheet about one minute per side, till toasted. Drizzle each slice with one teaspoons oil; sprinkle each with half teaspoons Parmesan cheese.

Split soup among four large soup bowls and top each serving with prepared toasts.
