i love tofu when it's crispy on the outside! get a skillet (non-stick or cast iron) nice and hot, get it well oiled up, and set sticks of tofu for about 2-3 minutes per side. adding some sort of honey drizzle can help it caramelize too, if you like that sort of thing. to get that, though, it does have to be well dried - like, wrapped in different towels for a couple of hours with a brick on top. it's great if you can set it aside & not worry about it.
