This looks fantastic. It also looks like something that @mrsbozz and I would be happy to call dinner any night of the week. I used to hate most green veggies and to even think that I would be eating quinoa is shocking. She has really opened my horizons since we have been together and dishes like this are pretty much the norm in our house now. To be fair though, ours would probably have some chunk chicken in it though. I still need to have my meat. Thanks for sharing this great recipe.
