Raspberry, Quinoa and Chia Pudding
⭐2 tbsp quinoa, uncooked
⭐1/2 cup fresh or frozen raspberries
⭐2 tbsp chia seeds
⭐1 tsp maple syrup
⭐1/2 cup reduced-fat milk of choice
⭐1/2 tsp matcha green tea powder
⭐1 tablespoon reduced-fat Greek natural yoghurt
Cook rinsed quinoa as per packet directions.
Set aside to cool.
Place raspberries (defrost if frozen) in a bowl and mash with a fork.
Add chia seeds, cooked quinoa, maple syrup and milk.
Stir to combine.
Divide mix evenly into a bowl or container for each serve you are preparing.
Cover and place in the fridge overnight.
When ready to serve sprinkle with matcha green tea powder and dollop with yoghurt.
