i make a similar one where pasta is replaced with butternut squash slices-its slightly on the sweet side but tasty...
Yes, I had the previous day's dinner with eggplant pineapple tomato and cheese, without the pasta.
Then I remembered that I had pasta for lasagna at home and I said, then combine new flavors again.
truly creative and great-making me hungry here now :-)
