So is this wallet one in the same with our actual Steemit account? By that I mean is it possible to send only some of our Steem over there as opposed to giving the wallet access to all our Steem?

Well, this pulls information from and interacts directly with the steem blockchain, so it is attached to your steem account - but there are a few things you can do to mitigate risk. You can start another steem account and only send a few steem dollars to it, and only give the wallet access to this temporary account. You can also read through the code - specifically the www/js/login.js file to see that your password is not only safe, but not ever stored or used beyond logging you in. Your password is used to generate your active and memo key and then forgotten. The active and memo key are stored encrypted on your device only. There are easy build instructions on GitHub as well if you don't trust my Google play build.
