Lamb Knuckle, Bacon and Mint Stew
Was just in the mood for a stew today... probably because of the rainy weather. And whilst I am a huge fan of lamb knuckles - Dave, not so much (lunatic...lol) so I thought I would throw in a bit of bacon today to make his heart happy too Haha! Hoping this turns out as tender as it should be, because unfortunately I could not start cooking as early as I had hoped, because we had no power compliments of local loadshedding... but it's on the go now and I guess thats pretty much all that matters and either way it will be totally worth the deliciousness!!

A stew is such a good thing. Even with our little veggie, a stew even without meat is delicious and nutritious!

I have never seen this stew before but it looks delicious. I'm from a small town in US though and I've never seen lamb knuckles for sale here.
