Drunken White Clam Soup With Veggies

The weather yesterday was a bit chilly and I was in the mood for a soup so I decided to make a clam soup with dry white wine called ”Drunken Clam Soup”.

I bought some fresh ”Almeja blanca malla” or white mesh clams in the supermarket and when I got home, I transferred the clams to a container with ice so it will keep it’s freshness before it’s cooking time.

Making a clam soup only takes 15-20 minnutes. You don’t want to overcook the clams and I also added some carrots and potatoes chopped in small cubes to give my clam soup a bit creamy and more tasty.

Note: Before buying the clams make sure that it’s fresh. How to know that it’s fresh? When the clam is close, it means that it’s fresh and alive.



Ingredients:

500g white clams
1 tablespoon olive oil
1 tablespoon unsalted butter
1 tablespoon chopped white onion
1 teaspoon chopped garlic
1 teaspoon red chili (optional)
1 small potato (slice in small cubes)
1 small carrot or baby carrot (slice in cubes)
200 ml dry white wine
300 ml of hot water
1 slice of lemon
A pinch of sugar
1 teaspoon of Salt and pepper
Chopped parsley


Method

  • Clean the clams by soaking them in a container with water and sprinkle some black pepper and salt. This will help to remove the sand and dirts attached to the clams.

  • Heat the oil in a sauce pan and Sauté the onion, garlic and chili for 40 seconds over medium heat.

  • Add the baby carrots, potatoes, sprinke salt and pepper. Sauté for few seconds then pour 150 ml of wine and water then mix all together.

  • Finally add the clams. Give it a good mix for few seconds, cover the pan with lid and cook until the clams begin to open, for about 3-4 minutes. Add the remaining 50 ml of wine and discard any clams that didn’t open. Sprinkle with chopped parley.
