Tomatoes are very good source of antioxidant which help to reduce weight and clear our system. Try this recipe and nourish your family with healthy tomato soup.

Ingredients:

2 large juicy tomatoes chopped use red ones

1 teaspoon sugar

6 big cloves of garlic crushed

1 Medium onion chopped

½ teaspoon dried basil leafs

½ teaspoon dried oregano leafs

6 black pepper corns crushed

Salt 1 teaspoon or to taste

1 and ½ cup vegetable stock or water

2 table spoon olive oil

1 teaspoon cream

Cooking Instructions:

first of all heat a pan, next add olive oil and let it heat a bit then add diced garlic fry for 1 minute. Add chopped onion fry till golden. Finally add tomatoes and fry for 2 minutes. Cover and cook for 15 minutes on low heat; in between give a nice stir 2 -3 times.

Now grind the above tomato mixture in a grinder into a fine paste.

Heat a pan. Add 1 tablespoon butter once butter started melting pour the above grind tomato paste in it and mix it very well with butter. Now add vegetable stock, oregano, basil, black pepper corn, sugar and salt. Cover and cook for 5 minutes on medium heat and then uncover and cook on low heat for 5 -8 minutes.

Remove from the heat and let it stand for 5 minutes. Sprinkle some chopped coriander leafs and add little bit cream on the top, serve hot.
You can enjoy the hearty tomato soup any time during the day.
