I learned how to cure olives at our intentional community decades ago. I never ate them before that because I didn't like the taste, found out that in America they use Lye to detannen them.. that's why I didn't like it, when I just used salt I've been hooked for life. Of course very picky of the ones I like! Thanks for sharing! Love the roof method! LOL!
