Happy Thursday Uloggers

Today I'll be sharing my own version of Spicy "Ginataang Santol" (Cotton Fruit with Coconut Milk).

Since my childhood days, this recipe is what I've been looking forward to during Santol season, I love the combination of the sour-salty and creamy taste, Sour because of the cotton fruit, salty because of the shrimp paste and creamy because of coconut milk.

So let's get cooking.

Ingredients...

20 pcs. of Santol (cotton fruit)

3 cups of coconut milk

50 gms. of shrimp paste

1/8 klo of pork

Siling Labuyo (chilli) - optional

How To...

  • peel the cotton fruits and grate them, make sure to take out the seeds, then put them in a cotton cloth then saueeze the juice in it...

    this is what we need cotton fruit meat

  • saute the onion and garlic until the onion is translucent

  • put cotton fruit meat and cook for 4-5 minutes

  • then add the coconut milk let it simmer for 5 minutes

  • when the milk is half gone add the shirmp paste and some chilli pepper (optional)..

  • when all the milk is gone it is ready to serve

santol is season now, abundant in my place.. your recipe is something new to me, did not have an idea it can be cook that way, what i know is only the jam making of it..

hehehe.. sad thing I am not in our province now to document making some, i did it in high school time, our TLE activity... but if you know guava jam, the recipe is the same..

This recipe is quite fascinating. I would love to try that at home! Continue sharing your recipes :)
