Organic Potatoes with Black Beluga Lentils and Fresh made Peperonata
Another vegan wednesday ;)
What's up, Steemians!
First things first, all the Veggies i use
are organic clean and grown as close
to where i live as possible.
Regional is the new Bio!
So what we have here:
I started with the black lentils,
cause they cook the longest...
nearly 30 minutes, our fibers and proteins.
Then i boiled the potatoes, and for sure
i add some fresh rosemary later to the
potatoes and the lentils.
Our carbohydrates, or the fuel in the tank ;)
The Peperonata is typical italian...
You fix it with a good olive oil, garlic and
mediterranean herbs, salt, pepper in
the pan. Don't cook them too long,
if you like your veggies "al dente"
Our vitamins, strength.
Last, i put some fresh Green on top.
Cucumber to use up?
Ok, cool... or take some fresh salad.
More Green, more Power.
Plus i always throw some extra
pumpkin seeds or sunflower seeds
on top for extra proteins.
Olive oil, balsamico vinegar, some more
spices and herbs.... pronto!
