It is aged on the bone and then filleted. Although the duck looks quite dull from the outside, it's actually hiding a succulent pink complexion inside.

Overall, very happy with the food. A lot of thought has gone into producing the best taste and not too much into the presentation. That's not to say the presentation wasn't good, it was just overshadowed by how much explosion of tastes the foods produced despite looking ever so simple.

Highly recommend Momofuku Ko, especially the seared duck with broccolini.
