The Birds are going on the Road again!

We’ve decided to take a quick trip in our travel van! I’ll be sure to share our adventure as we go. But before we leave I like to prepare healthy travel snacks. Our van has a very tiny kitchen, but it works for me!

We always enjoy dinnertime when camping. Don't you? I don’t know if it is due to the long hikes or the beautiful nature or fresh air, meals are special. This trip won’t be any different, including the snacks! I would love to share one of the snack we're taking. I know you’ll like it….after all it contains CHOCOLATE!

Chocolate Carmel Travel Snacks with Maca!

This snack is full of healthy ingredients… where should I begin?

  • Maca Powder- contains flavonoids which reduce stress and anxiety, improves blood pressure, promotes natural antioxidants in the body. Helps regulate estrogen in menopausal women.
  • Tahini- made from ground sesame seeds, tahini is high in protein (6 grams per 2 tablespoons) and contain more Phytosterols than all other nuts. Phytosterols are important in combating chloresterol and cancer.
  • Dates-they’re high in fiber, high in antioxidants and vitamins. Dates are excellent for promoting brain health
  • Raspberries-consuming raspberries appear to reduce the risk of obesity, heart desease and diabetes! Full of those powerful antioxidants! Raspberries are known as natures candy!
  • Chocolate- well…need I say anything? Okay, actually chocolate from the cocoa seed is one of the best sources of antioxidants on this planet! Scientists have found chocolate helps lower LDL and raise HDL, two important risk factors attributed to heart health and helps reduce insulin resistance with those who suffer from diabetes.

Hopefully this sounds healthy to you! Now let’s make these goodies!

I used

  • 2 cups pitted Dates
  • 1/2 cup Organic Tahini
  • 1/3 cup Almond Meal or Flour
  • 1 tablespoon Maca Powder
  • 1/2 cup Fresh Raspberries
  • 1 cup Cocoa butter
  • 4 tablespoons Maple Syrup
  • 1/4 cup Raw Cocoa Powder

Begin by pulsing the dates and Tahini in your favorite food processer until combined, then ad Almond Meal and Maca Powdere and continue to process until you achieve a dough consistency.

Stir in the raspberries and evenly press this mixture into a parchment lined baking pan. Place this in the freezer for about an hour to firm up.

While I was waiting I melted the cocoa butter and then combined the Maple Syrup and Cocoa Powder. I like to do a little taste test on the chocolate….you know, just to make sure it’s sweet enough lol

Times up, now cut your little gems into bitesize pieces and place them on rack. Feel free to try a few, they’re sooooooo good.

Now drizzle, drizzle….as much chocolate as you want! Cover with chocolate and if you wish you can sprinkle a tiny bit of sea salt on top….give a little salty chocolate carmel YUM! Back to the freezer for about 30 minutes and…

Enjoy! We’ll love these on the road!

Yum! Who doesn’t taste their chocolate while making treats 🤷🏼‍♀️ It’s only natural. Once again @birdsinparadise you make me inspired and somewhat hungry.

Btw I’ve since used Dates to make a cake and you’re so right, the pits are easy peasy to remove. Thanks for your expertise :)

oh my friend, these are quite dangereous...only allow myself one little bite after each meal! A formal palate cleanse hehehe! Thank you!!

I know what you mean… every time I make pumpkin bread I’m in danger. I mean eating an entire loaf in one night probably isn’t that bad for you right …?!?

If that was the kind of food you had on offer when your daughter was growing up she was a lucky girl indeed

Although I have always cooked in a healthy way....I have said many times if I knew then what I know now....watch out! I was so busy being a working mother...I didn't have the luxury of being creative although they indeed had their fair share of dehydrated and baked goodies as well as garden goodies! Thank you @riverflows, was your mom a culinary elf?

They look super delicious! I wouldn't have thought of adding tahini. Good to know!

Tahnini is a great nutty add to many recipes especially with the dates. I hope you'll try them, the raspberries and chocolate...yum! Love to hear if you like them :)

oh man those look so amazing... even without the chocolate coating, but when that gets on it I think it's all over, LOL!!

Will definitely have to try these, thanks for sharing!

Thank you, glad you liked them! We allow ourselves one little bite after lunch and dinner lol like to say it cleanses the palate :)
