Cooking 1: Traditional Chinese Spring Roll with bean curd skin

Hi Steemians~
Since I am cooking today, so I thought why not sharing it with all fellow food lovers out there to try it out.

Disclaimer: I am not expert in cooking, most of my cooking is based on experience and try and error. So please forgive me if I make any mistakes.

This is the end-result after steaming.

Recipe:

-300grams of minced meat (pork/chicken/beef)
-150grams of shrimps (frozen/fresh)
-100grams of bean curd skins
-Half a carrot (minced)
-3 garlic cloves (minced)
-3 mushrooms (minced)
-5 shallots (minced)
-8 water chestnuts (minced)
-1 egg

Marinates

-1 tablespoon Oyster sauce
-1 tablespoon Sesame Oil
-1 teaspoon soy sauce
-1 teaspoon fish sauce (optional)
-1 teaspoon five spice powder
-1 teaspoon black pepper & white pepper
-1 tablespoon of reserved soaked mushroom juice

Methods

  1. Soak mushrooms ahead with cold water then dice it after it's soften

  2. Diced and minced carrots, shallots, garlic, mushrooms, water chestnuts, shrimps and pork

(Carrots should be cut into matchsticks first so that it's easier to dice)

3.Add all ingredients including minced pork, shrimps and all marinate in a big bowl to start mixing into a paste.

4.Crack an egg after the paste starts to form and add a few teaspoons of mushroom juice into the mixture to enhance the flavour and the consistency.

5.Cut beancurd skins into a rectangular shape or depends on the size you desire.

6.Start wrapping, roll and fold the size to avoid leakage

7.Steam for about 13-15 minutes depending on the size.

8.Serve hot or cool it, to store in a container and froze in the freezer. Defrost it the next time when you want to reheat it by steaming it again or deep fried for crispiness.

Mmmmm ! I seriously love spring rolls , but have never made them ! Thanks for sharing the recipe , these would be great to make and freeze ahead of time , then I can just deep fry them , I love them crispy ! Do I thaw them before deep frying !? Or right from frozen !?

Absolutely, you can make it ahead steam cooked it and frost it. Defrost it anytime when you feel like cooking it. The reason of defrosting it before frying is to avoid major oil splash. After all, your skin is more important! To answer your question, you can absolutely fry it!! I like it crispy too :DDD

Sounds great ! Thanks for replying back . This is a good project to make on the weekend when I have a bit more spare time and then steam them , then freeze them for later , or during the week when im too busy for cooking ! Quick and easy !! 😋😋😋👍

It's very nice to make it in small pieces to snack on or make it longer a dish with rice. Compliments very well, I've made a big batch today so that I could store for cooking next time when i'm busy :D
