Sometimes cooking isn't that easy and I end up with this

I was planning for another #packetmeals post today, but yesterday I suffered from some pretty horrible back pains that left me in bed for the majority of the day. This meant that the shopping wasn't done, but I should have been able to do it in the morning.

Well, today I woke with a terrible new headache, and managed to pop my left hip. Painkillers and Voltaren gel, as well as a heat pack are my saviors, getting me to the shops, but not until mid afternoon, delaying the cooking until tomorrow.

So what to eat tonight? Well last time I was at the supermarket I found some mini calzones on markdown that I'd put in the freezer, and we had some single serve veggies that a former housemate had left behind that need using. 25 minutes in the oven for the calzones. 2.5 minutes in the microwave for the veggies. Plate it up and a bit of dijonaisse on the veggies.

The veggies were improved by the small amount of dijonaisse, but were both under and over cooked in some strange manner. Next time I'll likely be using a packet of them in a pasta, or stir fry where they're cooked some more after the microwave and hopefully that will improve them, but I doubt it will do much for them.

The calzones were decent, with a crisp outer crust, soft inner crust, and a tasty interior that consisted of a tomato based sauce and small bits of meat. The meat was not really identifiable, but I suspect beef, and possibly salami. Not really the range that I'd call "meatlovers", but it was meat, well filled, and decent enough. Meatlikers or MeatOKenough really don't work that well for names though, so I guess Meatlovers is acceptable.

Madness, I know. But these are the ways of microwave veggies it seems.

I don't see any meat. I almost thought you just put rice inside two buns.

That filling turned out much less red than it actually was. I mean it wasn't very red, but it was quite a bit more than how that filling looks

I hope the pain goes away or at least eases up for you soon. Some times we just need these sort of no fuss meals, especially when the troubles hit. All the best mate.

The regularity of my pain issues is why I keep a well stocked freezer. Currently though I'm almost out of frozen servings of my cooking posts, so it was this, or some of the stuffed chicken thingies with chips or veggies. Also why I kind of need to do the cooking tomorrow, as then I'll have another choice of what to eat

I'll be fine. I did 2 km today just getting to gaming and home. I pop my hip around once every couple of months thanks to my significant hip dysplasia thanks to the under-development of the joints when I was younger and fighting Crohn's. It ate way too many of my nutrients. It's nowhere near as bad as a full dislocation (which sucks big time!) but it's just a minor slips out and back in with a wonderful popping sound. Means at least 6 hours and up to 2 days off my feet, and slows my pace significantly.

It was a better meal than tonight, where I was lacking time so didn't eat until I got home and just had a couple of snags in bread... I'm super healthy :)
