Happy #fruitsandveggiesmonday! Mango season has officially started when you are getting more mangoes out of the garden each day then you can eat. A lot of them go to friends and neighbors, other ones go chopped up into the freezer for smoothies and "nice creams." And the other day somebody told me to make a sweet and spicy mango chutney… so that is what I did today!

Though I have never made mango chutney before - strange right with all the mangoes around - it was finally time to give this a go as this friend wasn't the only one who told me to make chutney.

And oh boy…. I have been test-testing a few spoons and I can't wait to use it in a dish. Though I am not sure where to start, other than just finishing the whole pot with my spoon hehe.

So expect an Indian-style dish with a side of chutney in the coming days. Or a mango chutney-based salad dressing could work too. Or maybe I can use it as a spread…. See where do we start. Maybe with another quick last spoonful…. Hmmm.

SPICY MANGO CHUTNEY WITH MANGOES FROM THE GARDEN


INGREDIENTS


3 cups mango, cubed
1 cup onion, finely chopped
2-3 cloves of garlic, minced
1 tbsp freshly grated ginger
1 Thai chili pepper, finely chopped (or to taste)
1 tsp cumin powder
1 tsp turmeric powder
Sea salt and black pepper to taste
1/2 cup apple cider vinegar (ACV)
1/2 cup raw cane sugar

STEP ONE: HARVEST MANGOES THAT ARE RIPE

I am no mango expert, but we clearly have many varieties in the garden that are all in different stages of being ready. The first one to bear a lot of ripe fruit is the one that has small round mangoes which get a red/orange/yellow color when they are ready. Since we have so many of these, I mainly used this variety with a few of the normal ones…. Or the ones that are still a bit green and have a long shape in the picture. Once you get these from the trees they will be delicious in a day on the counter. Or in a paper bag for fast ripening.

Normally you can get them yellow from the tree but my hubby doesn't like them overripe and these are the ones that I found on the floor….

Here are a few pics from the trees and mangoes in the garden...... some already have fruit, others are just beginning to flower.

STEP TWO: MAKE THE MANGO CHUTNEY


  1. Heat cooking oil over medium heat. Saute onion for 2-3 minutes before stirring in the grated ginger, garlic, and Thai chili pepper. Cook for 1 minute more. Add more chili pepper for more heat. As I have said before I like spicy but not too spicy so I prefer to add a little and then put homemade chili paste on the table for everybody who likes it spicier, like my hubby.
  2. Then add the mango, acv, sugar, cumin, turmeric, and salt and pepper. Stir well and simmer uncovered for about 1 hour on low heat or until thickened and sauce-like.
  3. Allow to cool and add to a clean jar with lid.
  4. Store in the fridge for up to 1 month, though it will not last that long. I am sure of that ;)

Oh Amy you continue to make me so envious of all your homegrown exotic fruits! I adore anything mango... but chilly here for nice creams but spicy chutney sounds just the job! YUUUUMMM!

First time I made this chutney and so love it. Wish I could send you some ;) Loving the tropical fruits but then you have berries. Miss them so much. They remain my favorite fruit. When I go to Belgium I will bring some seeds and small plants with me.... last time I did the same but then we lived next to a river and flood happened and washed everything away :(

Yeah let's do a fruit swap by post... you send me tropical goodies, I'll send you berries. Bit of a mushy mess... maybe not such a good idea after all haha :-)

Oh my goodness, do you have photos of the flood? That sounds rather alarming!

My mom just brought me blueberries from Belgium... so good! Last time I took raspberries... mushy mess indeed... but I ate them all.

We have loads of pictures. Think I mentioned them in a post months ago but will make another one about it once I have some more time.

I love anything with mangoes. It have never made mango chutney. I do like adding them into curries for a touch of sweetness. I will have to try to make some! Thank you for the recipe @amy-goodrich.

I bet that's delicious on just about anything! Toast, rice or quinoa pilaf, grilled avocados (grilled anything, really), even mixed in for a sweet and savory hummus or bean dip would probably be excellent!

Amy, you literally live in a PARADISE..............every time I am looking at your photos I am totally amazed. In addition to that, mango are one of my favorite fruits, especially the yellow kind Ataulfo that we get here from Mexico. Although I am not sure if you grow that one, your mango must be the best because you pick it straight from he tree and store mango can never measure to that.

The chutney must be also to die for, wow! I love Indian food, so I could definitely enjoy it. I have to make it someday soon and I also look forward to see the recipe you are going to come up with.

Not all that glitters is gold though ;) Just saying that every country has his drawbacks. Should make a post out of it one day. Live can be pretty tough here.... but I reckon that's the price you pay to live in paradise hehe.
I truly wish I could send you some of the mangoes. Or I have said it before, you are more than welcome to visit us and harvest as many as you can. Mango season will still go until may... maybe the last mangoes in June ;)

Aww! I am so jealous about several?!!! mango trees in your backyard! Lucky you! I love eating the pure fresh mango right as it is while the juice runs down my arms to the elbows ... 😆😋 Making something off a fresh, sweet, precious mango always feels like I destroy it. I don't know. I never bear to cook with it ... But this chutney sounds so delicious! Maybe I should try this one day when they have a special offer ...

Hehe... can I lure you here with the juiciest mangoes.... please come visit lol! Too much to eat and share. It is with pain in the heart I see so many mangoes rotting on the floor.... but these days almost everybody has an overload of mangoes. Most people have one or more in their garden. One tree is already a lot and we have some of the biggest mango trees I have ever seen... think we have about 5 big ones and maybe another 5 smaller ones. Ohh and if you love mangoes.... you will love the chutney! So good!
