Happy Monday my foodie friends! I hope you all had a fantastic weekend and are energized for another round of #fruitsandveggiesmonday! I know I can't wait to see what everyone shares once again. My boyfriend and I had another busy weekend with visiting his family this time, so I haven't had a chance to do my usual meal prepping yet. I'll just take a bowl from all of you if you don't mind... 😉

This week we have the green smoothie goddess herself @amy-goodrich filling in as HONORABLE GUEST JUDGE. Though last week it was her yummy zoodles with sun-dried tomato pesto that earned her top spot. Our dear creator @lenasveganliving is also getting back into the swing of things in the kitchen, so don't miss her latest beauty of a creaton with rainbow yams! (I personally think they should be renamed "yums"...)

I wanted to make sure everyone checked out your delicious meal, too. 😉 I haven't had as many photo worthy meals lately since we've been a bit busy, but at least I have some old classics to share. About to head into the kitchen now to catch up on my meal prepping. I think soup is on the menu for today! 🍲

Yum! Mine's bubbling away in the slow cooker, and now I've got a rutabaga and sweet potato hash-brown casserole cooking up in the oven. Fingers crossed it comes out well!

Lovely dish @lenasveganliving 😉 so glad that I can make an entry as earlier as I could this week. No Recipe because I have no access to the kitchen😁😁 I cooked but not vegan's food.. so let's get to know more about the fruits of my country😊
