Fruits and Veggies Monday {Farmers Market Haul & a Family Lunch}

Happy Monday folks!  I have been a bit absent the past few days on here, but I'm always happy to pop back up for @lenasveganliving's #fruitsandveggiesmonday (contest post here).  Last week was a fun switch to help my dear friend out in a few ways with the contest, however I am quite content to drop back into my usual role. ;)

This week I had intended to share a good meal prep post, but we ended up having both @dksart's parents and my own over for lunch yesterday.  It is actually quite rare to get both of our families together despite only an hour or so drive between them.  Every time we make it work it turns out to be a nice time for everyone.  Luckily I had gotten a little excited at the farmers market this weekend, so I was well overloaded with plenty of food to share!!

Everything looked so ridiculously good that I just couldn't edit down my purchases.  I had no idea until after getting home that we were going to have the parents over the next day, so it was a happy accident that I bought so much.  We'll never let good food go bad, but it is even nicer to be able to share with others.  His mom also brought us some beautiful fresh tomatoes from her garden.  I am not quite sure what this variety is called as she said they just grew on their own.  Gotta love those volunteers!  Some of the best tomatoes we've ever grown were from compost.

I had also gotten some lovely little Sungold cherry tomatoes from the market.  They have a nice sweet flavor to them and are so easy to just pop in your mouth for a burst of juicy summer flavor!

The corn was also abundant at a few of the stands, so I grabbed a few fresh cobs.  Shucking corn on the back porch always takes me right back to summers over at my grandmother's house when she and my grandfather would host cookouts for all of his workers.  I don't know that we actually did a very good job of it, but I suppose it was good work for little hands that couldn't help with the big cooking jobs yet.

Of course now that I am older I can not only savor the job as such a dear memory of my late grandmother, but I can also revel in the beauty of each perfectly place kernel.  I can see why food is a favorite subject of artists and photographers.  Nature is a talented artist herself.

Since I had such lovely fresh produce, I kept my contribution to our family meal quite light and simple to let all of the summer flavors shine.

The corn and tomatoes went into a succotash with fresh-cooked lima beans, a bit of red onion, basil from the garden and a drizzle of peach white balsamic vinegar.  Oh that corn was so heavenly!!

I filled another bowl with quinoa, roasted beets and Brussels, chopped pecans, dried blueberries, mint from the garden and a drizzle of tangerine balsamic vinegar.

I also made a quick batch of dip with chickpeas, avocado, lime, miso and some spices.

A simple summer meal that hit the spot to enjoy with loved ones!  I've got some meal prep to catch up on today and tomorrow, but definitely worth it to slow down and enjoy the day yesterday.  Have a great week everyone!

Yummy! Enjoyable post

If only I could share! I hope you are enjoying your holiday time!

I’m doing my best

This served as a great reminder that I haven’t had corn in ages! Seeing it all natural like that makes me really want some :).

I hadn't had any in so long either! I had completely forgotten how delicious fresh sweet corn can be. I hope you can track down some to enjoy!

Blimey, it makes me feel healthier just looking at that wonderfully fresh food. I don't think food gets much better than good, fresh tomatoes - especially when they are home grown. I'm not up and running on my allotment space at the moment so am having to rely upon my stepdad for them. Once again they are amazing!

Tomatoes, basil, olive oil.....drooling

Haha, well I'm happy to add a little health and vitality to your day! ;)

Our garden has struggled this year, so I am very thankful for the wonderful farmers market and for the homegrown goodies we've snagged from some friends and family. The tomatoes really are so perfect straight from the bush--I can't buy them from the store anymore!

Now you made me hungry! Soooo many goodies, love it and resteeming it! I know those black tomatoes, wanted to buy some seeds in the spring but we have to many already.

Haha, yep, lots of good stuff this market haul! I wasn't expecting the little black beauties, so I'm trying to figure out how to use them before they start to rot!

If only I had that buffet in front of me right now...I'm hungry :-)

Haha, I like to cook for an army apparently, so I always have plenty to share! ;)

How good and healthy food, really compliments

Thank you @mad-runner! Lots of good things to fuel my runs! :)

What a lovely produce again! I see these beautiful dark tomatoes all over Steemit but it looks like we don't have them in Switzerland..

I love fresh corn. The best is grilled with a little bit of butter (vegan one of course)

Simplicity at its best! Lots of fresh and almost no prep :)

Aww, what a bummer you don't have any of those tomatoes by you! They are quite delicious, but hopefully you have plenty of other varieties to keep your mouth happy this summer.

The corn is so darn good! I definitely need to pick up some more to eat right off the cob before the season is done!

We actually only have up to 10 varieties including various cherry tomatoes. Hopefully the farmers will get to know about the other ones soon 😊

Another reason to get your greenhouse built - these seeds are easily bought on eBay and would flourish along side your papaya tree 😍

OMG this food looks soooooooo good and your photos have me salivating!
I would have loved to have been sat at the table with you guys tucking into to this epwonderful meal! Great to see Brussels sprouts....it’s been years since I enjoyed them..... they are one of so many veggie favourites of mine 🤣

I am always happy when I can make someone salivate over simple fresh food! Especially the humble Brussels sprouts! ;) I imagine they don't really grow very well in the jungle, right? I am really so lucky this time of year--we still have some of the last of the summer crops hanging on, but then also some of the squashes and fall veggies are also starting to appear at the market. It's truly a fantastic time to get in the kitchen and create!

It's so light and simple yet so energizing. And yes, veggies grown from compost seem to have so much more flavour.

Thanks @mirella! We have a huge pile of compost breaking down in our backyard, so I'm hoping we'll get some good veggies on our own next year!
