Food Fight Friday Week 33 | Mango-licious Orange Chicken
Good morning my Food Fight friends! Things are heating up around the Bird’s nest!
We’ve had a bit of cool weather lately but now the heat is back, oranges are in full production mode and Mr. Bird is juicing like a hummingbird!
Luckily, I was able to grab a few just in time to make a lovely orange marinade for my @foodfightfriday entry this week! I had a tiny bit of Spicy Mango salsa left over from my Coconut Cucumber lunch number and a few chicken tenders available.
Ah-ha! Inspiration, time for experimentation!
I grabbed my fresh Mangoes…
Jalapeno peppers and salsa! Heat would be needed for this sandwich! I mixed up a nice marinade with fresh orange and pineapple juice, ginger and a dash of salt and pepper and nested those tenders into the marinade for a few hours. Just in time for a nice bike ride!
The ride was a nice one with cool, fresh air but I have to say a bit on the treacherous side. Visiting snowbirds can be a bit testy and aggressive, tail feathers all fluffed up. They definitely need a vacation, although I’m sure I was a bit grumpy when I had to trudge and shovel through all of that winter ice and sludge. We gave them grace, they needed it, the back roads were the safest today.
Back home now…
and Mr. Bird is circling the kitchen, I guess it time to grill! Toss those tenders on the grill, and toast that bread.
Open the fridge and what do we have?
- Fresh Goat Cheese
- Cucumbers
- Red Onion
- Fresh Spinach
- A bit of Mayo
- Bird;s Spicy Mango Salsa
- More Mangoes!
I chopped up a bit…
of mango, can’t have too much mango can we? Mr. Bird is busy grillin, quite a smile on his sweet beak! He loves those oranges.
The tenders are tender…
Lunchtime it is! Grab the buns, layer on a bit of mayo, spinach, cucumbers and now the tenders.
Don’t forget…
the goat cheese, salsa and crown it with red onions!
Oh, my- my! The food fight is in full flight at the Bird house!
We’ll need another bike ride after this tasty morsel…well not exactly a morsel; we looked like a couple of Thanksgiving Turkeys after this one! The Birds were fat and happy! After reading several of your posts I have decided that I simply don't have enough Mango in my diet. Tomorrow is market day, I'll see what I can do about that.
The snow birds are in full migratory mode here, too, though the trickle north has started. It'll soon be 100F and the trickle will become a flood!
Yes, I think I have overdone it with the mango posts, lol Time to give it rest, sorry about that! I have this bad habit of getting excited about a certain fruit or vegetable and enjoy it a bit too much! Yes, I think the snow birds are beginning to migrate north a bit. The transformation is really amazing, you know when the car transport semis show up, it's time! I hope you'll find some good Mangoes, we certainly love them. Ohh again those look so good, I am looking forward to it warming up here and firing up the grill again :)
It will be here before you know it! I just saw today that we move our clocks forward tonight! That makes me feel like spring is closer each day, then you'll be grillin like crazy :) I'm sure you make delicious sandwiches all summer long. Thanks @tattoodjay!
Yes its the same for me when we change the clocks forward it makes me feel like spring is just around the corner :)

I haven't had chicken for a while and thought it sounded great for dinner...just so happened it was time for a post on Steemit :) It felt healthy to eat I must say, and I am a true lover of Goat cheese so it came together pretty easily. I enjoy sharing silly stuff, I'm glad you put up with my silly-ness :)

I love mango. Especially a mango salsa with spicy jalapeño to round out that chicken sandwich. So yum 😋. You always make the best stuff. I’m actually craving some of that goat cheese too. If you were my neighbor I’d never fit in any of my clothes… swear. Hola to Mr. bird. It’s so good to see you in the food fight ring :)
I know, I'm going to lay off the mangoes for a while. My daughter was just telling me about the sugar content in mangoes....ruined my day... But I'm still having an occasional goat cheese something-something. I love that! Can you send me a piece of that goats cheese? I’ve been kind of looking for it here but haven’t had much luck yet. I think goats cheese is easier to digestive than cows and I’ve been having cheese cravings… so strange the way our bodies tell us what to eat. Haha… okay, okay, I’m talking your eyes off… if I were your neighbor it would probably be worse. Haha
