Here are a few colorful yummy simple roasted veggie recipes that you (and even the kids!) can enjoy, with any meal of the day or even as a snack!

Some of you probably know by now that I like keeping things simple and easy in the kitchen. I also LOVE sharing all these simple recipes and tips with everyone so that ANYONE could have a go and try to enjoy cooking a nice meal for themselves or loved ones :)
This week I went with something I don't usually make : ROASTED VEGGIES! I usually make roasted cauliflower bites but this time I tried out a few other delicious flavors/veggies.

Each day this week I tried a different vegetable, from sweet potatoes, carrots, broccoli and what I usually make - cauliflower bites. I was surprised how delicious it was and how it all got eaten to the last bite!

These recipes go great as a side dish for any occasion or even as a healthy bite sized snack.
The best thing is that you don’t have to be a veggie lover to enjoy this recipe! Once the edges of become golden-brown it gives each bite a fine crispy texture with a delicious caramelized taste which takes these vegetables to a whole new level!

4 great and SIMPLE ways to make your perfect delicious healthy side dish:

1.Roasted Sweet Patatoes:

Ingredients:
4 sweet potatoes
3 tablespoons oil
1 tablespoon rosemary
1.5 teaspoon salt
1 teaspoon pepper

Method:
-Preheat oven to 200 degrees Celsius
-Peel the sweet potatoes and cut them into cubes.
-Place the sweet potatoes on a baking sheet, combine and mix with the remaining ingredients.
-Bake for 45-60 minutes (keep in the oven a few more minutes if you like them nice and crispy, as I do! :)



Serve and enjoy each bite!

2. Garlic Seasoned Roasted Broccoli

Ingredients:
3 heads of broccoli
3 tablespoons oil
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper

Method:
-Preheat oven to 200 degrees Celsius
-Separate the crowns of the broccoli
-Place on a baking sheet, combine and mix with the remaining ingredients.
-Roast for 45-60 minutes.



Serve and enjoy each bite!

3. Paprika Herb Carrots


Ingredients:
5 Carrots, peeled
3 tablespoons oil
3 teaspoons paprika
¼ cup parsley
1 teaspoon salt
1 teaspoon pepper

Method:
-Preheat oven to 200 degrees Celsius
-Peel and slice carrots diagonally
-Place on a baking sheet, combine and mix with the remaining ingredients.
-Roast for 45-60 minutes.



Serve and enjoy each bite!

4.Roasted Cauliflower Bites

Ingredients:
1 head of cauliflower, broken into florets

For the sauce:
1/4 cup olive oil
1 tablespoon paprika
A sprinkle of fresh (or dried parsley), chopped
Salt, to taste

Method
-Combine all the sauce ingredients in a cup and mix.
-Place the florets in a bowl, pour the sauce on top and mix together until all the florets are slightly coated.
-Spread the florets out onto a roasting pan lined with a baking sheet.
-Roast for 30-35 minutes until lightly browned and crispy.



Serve hot or cold and ENJOY each bite!

Yum, these look really good! Roasted veggies are really the best! Pumpkin and sweet potatoes are my favourites, but roasted fennel is pretty good too.

oh my amazing! I love roasted veggies! I also love sautéed veggies. One of my favorites is sautéed brussel sprouts, in olive oil, minced onion, salt, pepper, a little bit of balsamic vinegar, sautee until the vinegar caramelizes, then add bacon bits with it. mmm I think that combination would work great roasted as well. Will have to try it next time, I always just sautee my brussel sprouts.

You know I wasn't a big fan either, but then my cousin who is a chef and owns a catering company, made some at our family reunion, and I was like, awesome!!! LOL I hope you are having a great start of the week as well!

These are great recipes and they are very suitable for me. It is very fast, easy and simple, and very tasty and healthy :). I especially like cauliflower. I do it quite often, but it ends too quickly. It's really delicious. Thanks @cooknbake :)

You've highlighted some of my favourite veggies @cooknbake and what makes it worse...….It's tea time and haven't got anything organized yet. If I get my act together for tomorrow perhaps I'll do some roast veggies then. Nice cool weather for roast dinner. Love the look of your Paprika Herb Carrots. Might give those a go too. The weather really is getting chillier here @trudeehunter! A hot roasted meal / dish from the oven is perfect for it! I hope you get a chance to try them out. It was a first for me with the carrots- my husband ate almost all of them when it just came out of the oven and still on the baking pan😄 I was glad he left me some for my pictures!😁

That's a great recommendation for your carrot dish @cooknbake It was kind of your husband to leave you a few for your photos (lol) But its good to know he enjoys healthy eating. He and your family are lucky to have a wife and mother prepared to look after them well with their diet. I've just prepared beef and veggie soup on my crockpot and the aromas coming from it are very appealing. (:

Awww I love these recipes and like your style! I am always making such crazy, elaborate meals that take all day and my friends say there is no way they have time to make ;) I forget the pleasure in simplicity and deliciousness that you've shown here <3 I would love to snatch up some of that broccoli right now! <3

Haha😄 yup, I sometimes get carried away and stay in the kitchen for hours just trying new things and crazy meals! But I looove delicious meals that dont take too long, especially since lately I havent much time on my hands! And thats what I usually post about- those simple recipes that anyone could just go to the kitchen and try out!

Haha ya when I am home, I spend most of the day lost in the kitchen, a lot of times I don't even think to take photos of what I am making which ends up being disappointing when it comes out as a master piece ;)
